Description
Bonnardot Hautes Côtes de Beaune Sur Evelle is a red wine made from Pinot Noir grapes by the Domaine Bonnardot winery.
Bonnardot is the highest expression of the Côte de Beaune. The "Hautes Cotes de Beaune" appellation is situated at an excellent altitude and has therefore benefited from higher temperatures in recent times.
These vineyards were planted, more than 30 years ago, on steeply sloping land and are located on a rocky wall called Évelle, with a south-west exposure, hence the name.
Winemaking
The grapes are harvested by hand at their optimum point of ripeness and collected in boxes for transport. On arrival at the winery, they are carefully selected on the reception table. Vinification is done in wooden vats in whole bunches. No oenological products are added during fermentation and maceration for 30 days. The wine is matured for 12 months in oak barrels. The wine is bottled unfiltered after natural sedimentation.

Bonnardot Hautes Côtes de Beaune Sur Evelle is a well-balanced, elegant and fruity red wine, with very soft tannins, light, with present but friendly acidity, which is very pleasant to drink.
