The 2023 Ultreia Godello, mostly from the zone of Cacabelos, and the vineyards have been transformed to organic. This is an unusual wine for this bottling because the fermentation was very slow (nine months) and without temperature control, and the wine went through malolactic—it's the first white he bottled with full malolactic. Most (70%) of the wine was in large stainless steel and the rest in used barriques. This seems to be happening again in 2024. It has a golden color and a ripe nose of yellow fruit and a round, tender mouthfeel with a bitter twist in the finish and a dry, chalky feeling. This is the most Burgundian of the whites here. They produced close to 50,000 bottles.

Description

Rarely does a wine so clearly encapsulate the spirit of the person who makes it. Raúl Pérez, an almost mythical figure in Bierzo, is a modern alchemist who, rather than intervening, accompanies the vineyard like someone who walks alongside an old friend. In his winery in Valtuille de Abajo there is no hurry, no artifice. Only the tireless search for the essential. The story of Ultreia Godello is born, like many of Raúl's works, from a kind of radical intuition: to recover the most austere and expressive character of Godello, that Galician variety that for decades was relegated to second place behind Albariño, but which in the right hands reveals itself to be deep, mineral and with a soul for cellaring.

The wine comes from old vineyards grown in clay-limestone and slate soils in Bierzo, a region that, although mainly associated with Mencía reds, holds white jewels that in cool vintages such as 2022 reach an unusual tension. The Atlantic influence is subtly felt, moderating temperatures and lengthening ripening, while the altitude of the plots (above 500 metres) allows for a sharp, direct acidity to be preserved. In this environment, Raúl works with very low yields and minimal intervention, guided by the same principle that gives the wine its name: Ultreia -beyond-, a Jacobean greeting that encapsulates the idea of continuing, of never stopping in the search.

Winemaking

After a manual and selective harvest, the 100% Godello grapes destined for Ultreia Godello enter the winery without destemming, and are gently pressed with whole bunches. Fermentation takes place spontaneously with indigenous yeasts in used French oak barrels, without any kind of correction or artificial thermal control. Here, oxygen is not an enemy, but an ally. The Ultreia Godello remains on its lees for 12 months, with very occasional batonnage, allowing time and micro-oxygenation to do their work. There is no filtering or fining before bottling, only a minimum dose of sulphur dioxide to stabilise, respecting the wine's identity as much as possible.

Taste

As soon as it is served, the Ultreia Godello may seem closed, shy, like someone who needs a few minutes of silence before speaking. But it is enough to shake the glass lightly for it to begin to unfold its mineral language: wet stone, chalk, cold smoke, like a mountain path after the rain. This is not a wine of exuberant fruit; everything here is suggestive, restrained, elegant. There are hints of water pears, green apple, dried citrus peel, with a saline background reminiscent of the white wines of the Jura, but without the oxidation.

On the palate, Ultreia Godello shows a sharp, vertical, tense entry, like an obsidian knife. It then widens subtly, giving way to a creamy but austere texture, with that rare combination of density and lightness that only great whites know how to offer. The acidity is firm, integrated, and carries a deep, long, saline finish, with echoes of dried herbs, raw almonds and a slightly bitter aftertaste that invites another sip with unusual naturalness.

Ultreia Godello is a wine that demands attention, that does not give everything immediately, but rewards with layers of complexity, purity and truth. A Godello for those who seek beyond the bright mirror of fruit, beyond comfort. A wine of roots and thought.
