Description
Tomás Postigo Rebollo is a red wine from Ribera del Duero DO that stands out for its ageing in oak barrels of rebollo (Quercus Pyrenaica), a species of oak native to Spain, being one of the first of its kind. This wine is produced by Bodega Tomás Postigo, founded in 2008 by Tomás Postigo, a veteran winemaker with more than 30 years of experience in the region.
Winemaking
The wine is a blend of Tinto Fino, Cabernet Sauvignon, Merlot and Malbec, coming from 37 plots spread over 15 municipalities, located at altitudes between 750 and 1,000 metres above sea level. The soils where these grapes are grown are chalky, sandy-loam and covered with pebbles, which favours excellent ripening. Harvesting is manual and takes place between October and November, with a gentle vinification process, where the grapes are moved by gravity. The ageing process lasts 12 months in 225 litre barrels, resulting in 35 different wines that are combined in a final blend.
Taste
Tomás Postigo Rebollo presents an aromatic profile marked by notes of red fruits such as cherry and ripe morello cherry, accompanied by touches of wood such as cedar and sandalwood. On the palate, it stands out for its velvety texture and juicy acidity, leaving a sensation of harmony between the fruit and the wood. It is an elegant wine, with ripe tannins and a long, pleasant finish, ideal to accompany red meats, lamb or game.
