Description
Tissot Côtes du Jura Pinot Noir Confidentiel is an exceptional wine produced in the Jura region by the renowned Domaine Tissot. This winery, known for its commitment to biodynamics and organic farming, has created a masterpiece with this Pinot Noir. The vineyard extends over almost 50 hectares and produces about 35 cuvées per year, all certified by AB and Biodyvin standards. This Pinot Noir is made from 100% of this grape variety, which ensures purity and authentic expression of the terroir.
Winemaking
In terms of winemaking and ageing, Tissot Côtes du Jura Pinot Noir Confidentiel undergoes alcoholic fermentation with indigenous yeasts, followed by 18 months of ageing in French oak barrels. This barrel-ageing process allows the wine to develop greater complexity and depth of flavours. In addition, bottling is carried out without filtering, which preserves all the natural characteristics of the wine.
Taste
Tissot Côtes du Jura Pinot Noir Confidentiel is distinguished by its complexity and aromatic richness. On tasting, one can appreciate notes of fresh red fruits, such as cherries and raspberries, accompanied by delicate floral hints and spicy touches. The structure of the wine is fine and elegant, with soft tannins that offer a silky texture on the palate. This wine is perfect to accompany regional dishes such as Baeckeoffe, and is recommended to be served at a temperature between 16°C and 18°C to bring out all its characteristics. It also has a cellaring potential of 2 to 5 years, allowing its flavours to develop further over time.
