Description
From a very young age, Pepe Raventós felt attracted to the land that his ancestors tilled in Sant Sadurní d'Anoia. The idea of making Raventós i Blanc Blanc de Blancs was born of a bold intuition: to rescue the purest essence of the Penedès, from a blend of Macabeu, Xarel.lo and Parellada, through the native grapes grown in the emblematic Vinya del Llac estate, a vineyard more than forty years old facing north, with clay soils that release water slowly and a calcareous bedrock between pebbles that limits the water reserve, giving structure to the grapes. In the midst of a landscape of hills and water, the lake's influence moderates the extreme summers, favouring slow ripening and generating a singular balance.
Pepe Raventós is committed to a radically sustainable viticulture, promoting biodynamic work as a philosophy of life. In a region marked by history and market pressure, he took the courageous decision to leave the Cava DO to found his own classification, more demanding and committed to the territory: Conca del Riu Anoia. Thus was born a sparkling wine with its own identity, a true reflection of a specific landscape, climate and land.
Winemaking
After a manual harvest, each variety destined for Raventós i Blanc Blanc de Blancs is fermented separately in stainless steel tanks at low temperatures. The cuvée is then blended and undergoes a second fermentation in the bottle, resting on the lees for 18 months. The biodynamic method and respectful agriculture ensure that each stage of the winemaking process provides a transparency that faithfully reflects the typicality of the Penedès terroir.
Taste
The nose of Raventós i Blanc Blanc de Blancs displays an unmistakable freshness: Mediterranean herbs, dry hay and earthy aromas that evoke the most authentic terroir. Delicate citrus notes, fine nuances of grapefruit and slightly saline undertones. On the palate, a fine, persistent bubble caresses the palate: vibrant, balanced, with a sparkling freshness and a structure that is as clean as it is seductive. Intense minerality and restrained creaminess combine with a vibrant tension that nevertheless remains at the service of purity. The acidity remains lively right through to the finish, combining freshness and finesse, with a clean finish that whispers of limestone and nearby forest.
