Description
Pif wine presents itself as an authentic and vibrant expression of biodynamic and natural viticulture, the fruit of a collaboration between Amélie Vuillet and Sébastien Jacques, the latter also a collaborator of Stéphane Tissot. Pif's first vintage dates back to 2013, marking the beginning of a series of wines that stand out for their commitment to environmentally friendly farming practices and a minimalist approach to winemaking. This wine is an intriguing blend of Poulsard (predominant), Trousseau, Gamay and Pinot Noir, varieties that complement each other to create a unique and harmonious profile.
Winemaking
The winemaking of Pif follows a careful process where the grapes are destemmed and fermented with their skins for a month, without the addition of SO2, which contributes to its natural and authentic character.
The ageing of Pif is carried out under principles that respect the rhythm of nature, avoiding unnecessary interventions and allowing the wine to express itself freely. With an alcohol content of 11.5%, this wine is characterised by its garnet colour and an aromatic palette that includes notes of raspberries, blackberries, aniseed and black pepper, offering a complex and enveloping sensory experience.
Taste
The taste of Pif is a faithful representation of its nose, with a direct correspondence between the perceived aromas and the sensations on the palate. It stands out for its freshness and medium tannic structure, accompanied by a medium to medium-high acidity that gives it exceptional balance.
