Description
Mimetic is a red wine from the Gallina de Piel Wines winery. It is made mainly with Grenache from D.O. Calatayud, an area with a fantastic potential when looking for a fresher and fruitier profile of this variety.
This wine is made from grapes harvested from vines with an average age of 65 years that are located on deep clay and pebble soils between 750 metres and 1,000 metres above sea level.
Winemaking
The vinification process is characterised by a pre-fermentative cold maceration for 72 hours. This is followed by 2 weeks of fermentation with autochthonous yeasts where the must rests on its lees. The wine is stored in concrete vats, where it is regularly pumped-over and pumped-over and aged for 6 months.
Motivated by the altitude of the vineyards and the six-month ageing in concrete tanks with its lees, a surprisingly exquisite wine emerges.
Taste
Mimetic is a wine with a fruity expression on the palate combined with herbal and floral hints. It is fresh, yet light and delicate, with good acidity and great length.
A versatile and gastronomic wine
An ideal red wine to enjoy on its own, or as an accompaniment to meals such as grilled meats or more complex preparations.
