Description

For generations, the Marguet family has maintained an intimate relationship with the limestone soils of the Côte des Blancs. Benoît Marguet, a staunch advocate of biodynamics, believes that a wine should speak the language of its origin. Thus Marguet Chouilly Grand Cru was born: a wine that does not seek to please, but to express itself frankly. After a particularly balanced vintage, Benoît made an unusual decision: to vinify without dosage, confident that the energy of the terroir was enough to sustain the wine. "If the soil speaks, there is no need to correct it," he said. The base is Chardonnay from old vines grown on active chalk soils in Chouilly, one of the most elegant Grand Cru classified villages. The eastern orientation and the mild climate give the grapes a serene ripeness, without excesses. The strength of this wine lies not in its power, but in its precision. It is, like its creator, radically honest.

Winemaking

The grapes used to make Marguet Chouilly Grand Cru are harvested by hand in small crates to avoid damage. Once in the cellar, they are gently pressed in a traditional vertical press. Fermentation is carried out with indigenous yeasts, in steel tanks and used foudres, respecting the varietal identity. Partial malolactic fermentation is carried out, depending on the expression of the year. After this, the wine rests on fine lees for at least 36 months in the bottle, refining its texture and complexity without losing tension. Disgorgement is carried out without dosage (Brut Nature), which allows for a pure and mineral reading of the terroir.

Taste

In the glass, Marguet Chouilly Grand Cru is precise, vibrant and taut. Pale golden in colour, with very fine, constant bubbles. On the nose, it displays notes of green apple, lemon zest, wet stone and a delicate background of toast. It is not exuberant, but restrained and direct. On the palate, the entry is sharp, marked by vibrant acidity and a creamy texture that supports the dry, mineral profile. Hints of raw almond, chalk, grapefruit zest and a slight saline nuance linger on the long, sculpted finish. The lack of dosage highlights its purity and elegance without artifice. A Champagne for palates that love tension, soil, and the expressive silence of great wines.
