The NV Pedro Ximenez VORS, produced with Pedro Ximenez grapes is opaque, very dark brown, almost black-colored. It has the feeling of a very, very old, wine, with a note of coconut that I link to extreme concentration and age and that I find in other extremely old sweet wines. The nose is a symphony of dark chocolate, mocha and roasted coffee, with a thick, dense and oily palate. This is an extreme wine, very concentrated, sweet (458 grams of sugar per liter), intense and long, with a bitter touch that compensates the sweetness and makes it more drinkable. This is a beast of a wine, thick, intense and concentrated, to sip in very small quantities. A small bottle could last for years. Drink 2013-2030.

Description

A passion for the pursuit of time. The idea of Lustau Pedro Ximénez V.O.R.S. was born from a radical decision within Lustau : to rescue the oldest butts of its solera to bottle a wine that would tell the story of the purest, oldest, most silent Jerez. It was Manuel Lozano, the legendary oenologist of the house, who opted for this extreme selection. Out of hundreds of butts, only six were chosen. Not for their intensity, but for their majestic balance between sweetness, acidity and complexity. A Pedro Ximénez that does not seek to please everyone, but to move those who know how to wait.

The grapes come from vineyards located in the Jerez triangle, where the albariza soils -white, porous, almost lunar- retain the winter humidity to nourish the vines during the dry summer. The Pedro Ximénez variety is harvested late and then sun-dried, concentrating natural sugars and transforming almost into sultanas before slowly fermenting. The warm climate, the salinity of the air and the ancestral knowledge of this region give the wine its unique character.

Winemaking

After pressing, the grapes partially ferment, leaving a high concentration of residual sugars. But the essential part takes place in the cellar, where Lustau Pedro Ximénez V.O.R.S. is aged for more than 30 years in the traditional system of criaderas and soleras, in American oak casks shrouded in darkness and silence. Oxidative ageing gives rise to a slow and majestic evolution: concentration, tertiarisation, depth. Bottled directly from selected butts, without fining or filtering, each bottle may show slight cloudiness, evidence of its purity and authenticity.

Taste

Dark as ink, with iodised reflections, Lustau Pedro Ximénez V.O.R.S. falls into the glass with oily density. At first movement, the nose is flooded with dried figs , sultanas, dates, mocha, molasses and bitter cocoa. Notes of old wood, varnish, toasted walnut and sweet spices such as clove and cinnamon appear. The bouquet is deep, mature, almost eternal.

On the palate, Lustau Pedro Ximénez V.O.R.S. is dense, voluptuous, with an enveloping sweetness but perfectly balanced by a surprising acidity that adds freshness and structure. Each sip leaves a trail of dark chocolate, burnt caramel, candied fruit and liquorice. The texture is silky, the palate long, persistent, almost meditative.

A wine to finish a meal in silence, or to accompany a blue cheese, a dark brownie or simply an unhurried evening. This Pedro Ximénez is not just a wine, it is a fragment of bottled time.
