The NV Oloroso VORS, produced with Palomino grapes and aged in a solera system for an average of 30 years shows a bright dark amber color. It starts with some reductive notes, which might seem like a contradiction for a wine that has aged oxidatively for such a long time, but it all depends on how long the wine has been in bottle. If this happens to you, with this or any other old Sherry, you only need to give it plenty of air. I know it’s not very convenient, but once the producer has gone through the trouble of aging the wine for such a long time and you go through the expense of purchasing one of this bottles, you might as well wait one day rather than using it for cooking or pouring it down the drain. Anyway, once it blows away, the bright orange-colored wine reveals a pleasant nose of toffee, ash, chestnuts, honey and orange marmalade. The palate is intense, with flavors of cedar wood and spiced nuts, ending slightly salty. Drink 2013-2018.

Description
From the quietest corners of the Lustau winery, where time is not measured in years but in sighs of wood and salty air, comes Lustau Oloroso V.O.R.S. (Very Old Rare Sherry). The idea for this wine came about when the legendary oenologist Manuel Lozano -curious, tenacious, faithful to the character of the Jerez region- decided to explore the oldest and most hidden casks in the cellar. There he found nine Oloroso casks that had been resting for more than three decades, forgotten by the pace of the market but embraced by the silence of time. Made from 100% Palomino Fino, this wine is the pure expression of the albariza soil, the harsh southern light, the humid west and the oxidative tradition of the Jerez-Xérès-Sherry DO. Bottling it without fining or filtering was a courageous, almost obstinate decision to show the world the wine as it beats in the bottle: naked, majestic, uncompromising.
Winemaking
From the beginning, Lustau Oloroso V.O.R.S. is destined to an exclusively oxidative ageing. The Palomino grapes are fortified to about 17%, which prevents the development of the velo de flor and allows for slow ageing in direct contact with oxygen. For more than 30 years, the wine remains in a solera made up of nine very old butts, nurtured with care and wisdom. There is no rush. No corrections. When bottled, its primitive character is respected: no filtration, no make-up, just a slight rest to decant sediment. The result: an unrepeatable wine, limited to just a thousand bottles a year.
Taste
In the glass, Lustau Oloroso V.O.R.S. has a deep amber colour, with mahogany reflections and coppery glints. The nose is intense, dense, almost overwhelming: toasted nuts, hazelnuts, dark nuts, old varnish, tanned leather, and a background of salted caramel and toffee. There are also notes of prunes, dried apricots, and a suggestion of candied orange peel, all enveloped in a halo of noble woods and warm spices. On the palate, the wine is ample, round, powerful yet elegant. It glides with a rich, oily texture, where the dry sweetness of the Oloroso is balanced by an almost imperceptible but vibrant acidity. The finish is timeless, with echoes of pecans, sweet tobacco and aged balsam, leaving a warm, spicy trace that begs for silence and contemplation. Lustau Oloroso V.O.R.S. is a wine for those who understand that beauty can also be severe, and that elegance does not always need embellishment.
