The 2012 Original 1887 Brut Nature was produced with a blend of 50% Montonega (a specific strain of Parellada), 25% Macabeo and 25% Xarel.lo from old mountain vineyards at 380 meters above sea level. This was disgorged after 108 months in bottle with the lees. It has 12% alcohol and a low pH of 2.95. It has a pale golden color with some copper tints, very fine bubbles and an expressive and captivating nose of dry flowers, chamomile, yeasts, camphor, nutty and spicy, with notes of freshly baked apple pie. It has a fresh palate with very tasty, almost salty flavors and a dry finish. It worked very well to tame the heat from a green Thai curry. 2,009 bottles produced.
