Cold soaking with skins for 4 weeks before spontaneous fermentation in oak foudres. Aged for 12 months in Slovenian oak barrels. Finally it remains 12 months at least on bottle before commercialization.Bottled without sulphites.
Description
The wine Le Coste Rosso R is a wonderful representation of the Sangiovese variety. It comes from a selection of the best grapes from old vines in their 'Le Chiesa' vineyard, complemented with some Greghetto from other old plots.
Winemaking
The grapes were destemmed and the wine fermented with the skins in tanks for a month. Afterwards, it was pressed and transferred into old oak vats, where it rested for two years.
Taste
Le Coste Rosso R has a complex bouquet and taste. The nose is dominated by lovely notes of cherry, coca cola, pepper and dried herbs. On the palate, flavours of cherry and blueberry are perceived, accompanied by a variety of green herbs, tomatoes and balsamic vinegar. It is a dry wine, with high acidity, medium-high body, high alcohol content and medium tannins.
