Description
From the very moment Emmanuel Lassaigne decided to christen his creation Le Flacon de l'Incertitude, one senses a declaration of audacity: to welcome the unexpected, to embrace the individuality of each vintage and plot. Born in Montgueux, that hill that Anselme Selosse nicknamed "the Montrachet of Champagne", this Blanc de Blancs Extra Brut comes from chardonnays grown with the utmost respect - biodynamic, old vines, no herbicides - that aim to express their origin with absolute sincerity. The winery is a sanctuary of terroir: Emmanuel rescues a historically ignored vineyard and elevates it to an icon of purity and minerality. A revealing anecdote: in an age of convention, he created this cuvée as an "act" in his "Act V, Scene I" series, an unrepeatable piece where he accepted uncertainty as a virtue.
Winemaking
The grapes that give life to Jacques Lassaigne Le Flacon de L'Incertitude, exclusively Chardonnay from Montgueux, are harvested by hand when they reach optimum ripeness. Fermentation takes place with indigenous yeasts, without filtration or fining, often in stainless steel tanks - taking care of freshness - with occasional use of used barrels, but without adding oak notes - only complexity. After fermentation, the wine ages on lees for more than a year before tirage, and remains in bottle until disgorging, with little or no dosage, respecting its Extra Brut, almost Brut Nature aspect. The whole process breathes authenticity, with an unaltered terroir imprint and a freshness that is crisp and pure.
Taste
Jacques Lassaigne Le Flacon de L'Incertitude is a mind-clearing experience: a sharp, purplish mineral whirlwind, with vibrant salinity as if the sea wind had blown through the vines. On the nose, there are flashes of green apple, lime rind, faint bakery, and sea breeze contrasting with notes of green apple and lemon blossom. On the palate, the intensity grows: the acidity is sparkling, almost pungent, with energy and nerve that carry the flavours through to a long, saline finish, where the fruit is left in a clean, distant memory.
As a whole, the palate is a symphony of precision: penetrating minerality, barely hinted fruit, a saline vibration, fine, elegant mousse. It is a Champagne for lovers of the pulse - those who prefer clean edge over voluptuous splendour. As an aperitif, it is a knife of freshness; with seafood, it awakens every flavour.
