Description
Hito is a young red wine produced by Bodegas Cepa 21, located in the Ribera del Duero Designation of Origin. It is made exclusively with the Tinto Fino variety (100% Tempranillo), grafted with selected clones from emblematic vineyards in the area. The vineyards are located in Castrillo de Duero, on land facing north and southeast, which favours optimum ripening of the grapes. The soils of the vineyards are chalky-clayey and stony, which influences the minerality and character of the wine.
Winemaking
Alcoholic fermentation is carried out in stainless steel tanks at a controlled temperature for 12 days, while malolactic fermentation lasts 30 days, also in tanks. Subsequently, the wine is aged for 8 months in French oak barrels, which gives it a very balanced complexity and structure. The vinification process seeks to highlight the youthful and fresh character of the wine, combining modern techniques with respect for tradition.
Taste
Hito stands out visually for its deep cherry red colour, with violet tones that reflect its youth. On the nose, it offers an intense aromatic expression dominated by red and black fruits such as raspberries and blackberries, with subtle spicy touches and notes of fine wood from its time in oak. On the palate, it is a balanced wine, with soft, well-integrated tannins and a fresh acidity that makes it easy to drink. The finish is long and persistent, leaving a pleasant sensation of ripe fruit and spices. This wine is characterised by its elegance and modernity, ideal for pairing with red meats, cold meats and soft cheeses.
