One of the new wines this time was the 2019 Pedra, a blend of 80% Mencía and 20% other varieties. It matured in a granite egg that they feel opens the wines up quite a lot and 30% in oak to give it structure. It's fruit-driven, fresh and light with 13% alcohol from a very good vintage in the zone, not terribly complex and with a medium body and polished tannins. Ready. 1,000 bottles were filled in May 2023.

Description
On the impossible slopes of the Ribeira Sacra, where the vines seem to defy gravity, Pedro Rodríguez carries forward the Guímaro project with a clear conviction: that the wine should be a faithful reflection of the landscape. In the Amandi sub-area, where the Atlantic climate and the granite and slate soils give character, Pedro has opted for a heroic, manual, uncompromising viticulture. This is how Guímaro Pedra was born, a cuvée of only 1,000 bottles, fruit of the Mundín estate, planted with 80% Mencía and 20% of other native red varieties such as Brancellao, Merenzao and Caiño Tinto.
Winemaking
Guímaro Pedra arises almost as a sensory experiment, where the use of a granite egg for ageing -a rarity in the Spanish wine scene- allows for a natural micro-oxygenation without interfering with the aromatic profile. Thirty percent of the wine is aged in used barrels, which adds structure without masking the varietal expression. Everything is done with minimal intervention: spontaneous fermentation, no filtering or fining.
Taste
Guímaro Pedra is subtle and elegant, with a nose marked by fresh red fruit -cherry, raspberry-, floral notes and a minerality that evokes wet stone. The palate is agile, medium-bodied, with polished tannins and a lively acidity that runs through it from start to finish. Hints of pomegranate, blueberry, dried leaves and a very faint spicy background. The salinity and freshness of the finish make it a profoundly gastronomic wine, ideal to accompany simple but tasty dishes. A wine for those who are looking for precision, purity and the unfiltered voice of an authentic and unadorned Ribeira Sacra.
