Winemaking
50% of the juice is macerated with the skins for 30 days. Fermented with indigenous yeasts in stainless steel tanks and aged for 6 months in barrels. Bottled with addition of juice and aged in the bottle before disgorging. Bottled unfined, unfiltered and without added sulphites.
Description
Grinton Movest comes from the winery Ombretta Agricola. This particular wine is a sparkling Chardonnay that comes from a twenty year old vineyard located in the Colli Euganei. The soil rich in clay and limestone gives this wine unique characteristics.
Winemaking
While half of the fruit is pressed directly, the rest is macerated for five days. After fermentation, the blend rests in tank until the following spring, when it is transferred to the bottle with a little must from the same harvest for a second fermentation in bottle.
Taste
An ancestral wine with a cloudy yellow colour. Its bubbles carry notes of stone fruits, chalk and minerals. It is a vibrant col fondo, a traditional Italian technique of bottle fermentation, which makes it a refreshing and nuanced drink.
