Winemaking
The winemaking of Gallinas y Focas is a carefully orchestrated process. Fermentation takes place 80% in stainless steel tanks and 20% in oak barrels, which contributes to its distinctive flavour profile. The wine then matures for 15 months in new 500-litre French oak barrels from Allier, giving it remarkable complexity and depth.
Taste
The taste of Gallinas y Focas is a true masterpiece. The nose is earthy and warm, with notes of dark, powerful forest fruits, such as blackberry and raspberry, complemented by a hint of plum. Herbal nuances add a special finesse to the bouquet. On the palate, it surprises with fresher fruit and lively herbs, creating an interesting contrast with the olfactory sensations. The tannic structure is fine, balanced with an invigorating acidity. The wine unfolds on the palate with full body, culminating in an elegant and delicate finish, reflecting mainly fruity notes without becoming bitter.
