30% of the harvest undergoes carbonic maceration and the rest is directly pressed where it undergoes spontaneous alcoholic fermentation and ageing for 30 months in 600 litre demi muids and 1200 litre Stockinger fudre. Later it is blended. Bottled unfined, unfiltered and with no added sulphites.
