Description

François Cotat Les Caillottes is a white wine from the region of Sancerre, in the Loire Valley, an area renowned for its production of high quality wines, especially those made from Sauvignon Blanc. François Cotat is a prestigious winegrower who follows traditional methods inherited from his family, which has cultivated vineyards in Chavignol since the end of the Second World War. This wine is 100% Sauvignon Blanc, a variety that brings freshness and minerality to his wines.
The Caillottes vineyard, located east of the famous Monts Damnés hill, is characterised by its chalky and stony soils, which contribute to the mineral expression of the wine. The vines, relatively young with an average age of 15 years, are located in a flatter area and have been planted to produce wines of great elegance and precision.

Winemaking

The winemaking process is completely artisanal. The grapes are harvested by hand and pressed in a vertical wooden press. Fermentation is carried out with indigenous yeasts in old demi-muids, and ageing takes place in used barrels. The wine is bottled unfiltered and according to the lunar calendar, reflecting François Cotat's commitment to natural cycles and respect for the terroir.

Taste

On the palate, François Cotat Les Caillottes stands out for its freshness and purity. Notes of lime and white pepper mingle with yellow fruits such as peach and pear, providing a perfect balance between acidity and sweetness. The minerality, derived from the chalky soils, provides additional depth, while the finish is lingering and full of character.
It is a wine that is enjoyable young, but has the potential to age and develop complexity over time. Ideal with fresh goat cheeses or fish and seafood dishes.
