Description
In Meursault, where the surname Coche carries the weight of an age-old Burgundian promise, Fabien Coche decided not to rest on the reputation of his name, but to refine it. The domaine, founded in 1940 and formerly known as Coche-Bizouard, now cultivates 12 hectares spread across several prestigious villages in the Côte d’Or; since the 2017 vintage, it has switched to organic farming, a choice consistent with a philosophy already established in the vineyard and formalised through subsequent certification. Fabien Coche Bourgogne Côte d’Or Pinot Noir serves as an introduction to the estate, yet it is by no means a minor offering: it is made from four Pinot Noir plots totalling barely one hectare, with hand-picked grapes and viticultural practices designed to preserve the soil’s balance. Its origin, situated between Meursault and Pommard, gives it that Burgundian character where the fruit does not stand alone, but is underpinned by freshness, depth and a certain mineral rigour.
Winemaking
There’s no window dressing here. In Fabien Coche Bourgogne Côte D’Or Pinot Noir, the grapes arrive in perfect condition, hand-selected, and Fabien seeks a clear expression of Pinot Noir through fermentation in temperature-controlled stainless steel tanks—a decision that has tamed any rough edges and brought out precision in the fruit. The wine is then aged for 11 months in French oak, always with the aim of preserving clarity rather than allowing the oak to dominate. The result is bottled young, with vigour and clarity.
Flavour
In the glass,Fabien Coche Bourgogne Côte d’Or Pinot Noir offers notes of red cherry, raspberry and redcurrant, with a floral hint of violet and that nuance of undergrowth or damp stone that reminds us this is Burgundy and not merely crisp fruit. On the palate, it is silky, almost velvety, but a lively acidity soon emerges, tightening the structure and making it juicy, straightforward and flavourful. There are subtle spices, a faint hint of vanilla and liquorice, polished tannins, and a firm, fresh and slightly earthy finish, with that quiet elegance that needs no raising of the voice to make itself felt.
