Description

Droin Chablis Grand Cru Les Clos, produced by the prestigious Jean-Paul & Benoît Droin winery, is a benchmark in Chablis wines, known for its quality and longevity. This wine is made from 100% Chardonnay, grown in soils of Kimmeridgian origin, characterised by a combination of clay and limestone, which contributes to the wine's marked minerality. The vines have an average age of 40 years, which ensures low production and highly concentrated grapes.

Winemaking

The grapes are harvested by hand to guarantee the optimum quality of the grapes. After harvesting, the grapes undergo gentle pneumatic pressing, followed by racking for 3 to 4 hours before fermentation begins, which is carried out with indigenous yeasts in stainless steel tanks and French oak barrels. This fermentation process is carefully controlled to maintain the freshness and aromatic profiles of the wine. Ageing is carried out for 10 months, divided equally between steel tanks and oak barrels (50%), of which 20% are new, providing a slight additional complexity without masking the purity of the fruit.

Taste

Droin Chablis Grand Cru Les Clos is distinguished by its depth and complexity. On the nose, it offers a surprising range of aromas from ripe fruits such as peach and pear to more mineral and saline notes such as flint and oyster shell. On the palate, its balance is impeccable, combining great structure with vibrant freshness. The natural acidity preserved in the vinification gives it tension and vivacity, while its ageing in oak adds subtle smoky and spicy touches. It is a wine with significant ageing potential, capable of developing greater complexity over the years.
Ideal to accompany sophisticated dishes such as noble fish (turbot, monkfish) or shellfish, as well as white meats and more spicy preparations, such as sushi or sashimi. The precision and minerality of this wine make it an excellent choice for pairing with food that enhances its freshness and complexity.
