Jorge Monzón considers Canta la Perdiz to be the vineyard that produces his most elegant red, one of the oldest vineyards in the village of La Aguilera. The 2020 Canta la Perdiz comes from a Tempranillo-dominated field blend of very old vines that fermented with full clusters and indigenous yeasts in concrete, where it was foot trodden, then it went through a slow malolactic fermentation in barrel, around seven months. In total, the wine matured in French oak barrels for 42 months. The wine is faintly reductive at first and takes time to open up. It's elegant and slim, subtle, mineral and stony. The palate is unbeatable; crisp and crunchy, with classical proportions, super fine tannins and a lacy mouthfeel and texture. It's sapid and long, with an almost salty twist in the bone-dry finish. And it has good ripeness, with 14% alcohol and a pH of 3.59. 1,965 bottles and 69 magnums produced. It was bottled in April 2024.
