Description

When cousins Jean-Dominique and Jean-Laurent Vacheron took the reins of the historic Domaine Vacheron, they did so with a clear vision: to express the naked truth of the Sancerre soil. Their radical commitment to biodynamics - in a region where few dare to go so far - transformed their viticulture into a declaration of principles. Domaine Vacheron Sancerre Le Pavé is born from a single plot facing east, on marl and calcareous clay soils, where the Sauvignon Blanc sinks its roots among marine fossils and pure chalk. This micro-plot, with hard soils and low fertility, offers low yields and natural concentration. The winemaking of this wine was a commitment to precision and purity: a wine without make-up, without concessions. A recurring anecdote among the grape harvesters tells how, when harvesting Le Pavé, each imperfect cluster must be separated by hand - not one berry too many, not one too few - as if it were a matter of sculpting liquid mineral.

Winemaking

The Domaine Vacheron Sancerre Le Pavé harvest is manual and highly selective, with bunches carefully transferred in small crates to avoid oxidation. The must ferments spontaneously, with indigenous yeasts, in large wooden vats and concrete or steel tanks, depending on the vintage. Ageing lasts about 11 months on fine lees, without bâtonnage, which allows the natural tension and mineral expression of the wine to be preserved. No aggressive filtering is applied and no artificial oenological products are added. The entire process is governed by the lunar calendar, in keeping with the biodynamic philosophy that characterises the domaine and the pure spirit of Vacheron Sancerre Le Pavé.

Taste

Domaine Vacheron Sancerre Le Pavé offers a precise and ethereal nose: notes of wet stone, seashells, wild flower and lemon zest. A fragrance that evokes elegant, almost ascetic austerity. On the palate, the acidity is sharp, vibrant, marked by taut citrus fruit - lime, green apple, grapefruit - intertwined with pure salinity and a smoky, sun-warmed stone-like background. The texture is crystalline, defined, with a vibrant energy that runs across the palate like a bolt of lightning. The finish is long, with echoes of chalk, subtle gunpowder and dried flower. This is Sauvignon Blanc in its purest form: linear, mineral, unadorned, perfect for lovers of verticality and the raw expression of the Sancerre terroir.
