On the steep slopes of Chantada, in the wildest heart of the Ribeira Sacra, Pedro Guímaro and Raúl Pérez decided to do something that seemed to go against the tide: to let the vineyard speak without make-up, without invasive oak, without haste. This is how Castro Candaz was born, a project that is more than wine, it is an act of humility in front of the landscape. " El Curvado" is not just any estate: it is a curved and windy hill where the Mencía, accompanied in small proportions by native grapes such as Mouratón, Brancellao or Garnacha Tintorera, clings to soils of decomposed slate with granite touches, soaked by the Atlantic mist that rises from the Miño river.

The philosophy here is radical in its simplicity: minimum intervention, maximum truth. There are no young vines, no fertilisers, nothing to break the ancestral dialogue between vine and soil. The manual harvest is heroic, with the feet in the mud and the heart in the grape. Castro Candaz Finca El Curvado is the result of an obsession for the subtle, for what does not shout but resonates: rural elegance, without ornamentation.

Winemaking

The grapes that give life to Castro Candaz Finca El Curvado come in whole, without destemming, and are left to ferment spontaneously with indigenous yeasts in small truncated cone-shaped tanks. There is no forced extraction, just gentle pumping over to respect the finesse of the fruit. The wine is then transferred to used 500-litre barrels, where it undergoes malolactic fermentation and rests for 12 months, without additives, fining or filtering. Everything is bottled by gravity, as it would be done in a winery without electricity, with an almost monastic precision. Here the oak does not perfume, it accompanies: it is just another whisper in the symphony of the wine.

Taste

The first impression of Castro Candaz Finca El Curvado is one of cool velvet: translucent, ethereal red fruit, more reminiscent of a high-altitude Pinot Noir than a conventional Mencía. Wild cherry, dried raspberry, plum skin. Then comes the mineral heart of the wine, that tension of wet slate, iron and faint smoke, as if walking barefoot on a shale hillside after the rain. The tannin is very fine, with an almost imperceptible grain, but firm, enveloping a fluid, nervous body, which is not heavy but lingers.

In the mouth, Castro Candaz Finca El Curvado does not impose itself, it insinuates itself. It has that rare quality of lightness with depth: it enters easily, but each sip begs for silence. There are notes of bay leaf, an echo of dried thyme, an electric acidity that pushes it towards the long, vertical finish, where the fruit disappears and only the landscape remains: the soil, the stone, the mist.

Castro Candaz Finca El Curvado does not seek easy applause. It is a wine for those who are more moved by a sigh than by an explosion. For those who listen attentively when the wine speaks softly.
