Description
To speak of Billecart-Salmon Le Réserve is to speak of quiet elegance and historical precision in the world of premium French Champagne. Since 1818, Billecart has cultivated a style based on purity, finesse and absolute respect for the Champagne terroir. In the face of fads and over-extraction, the family opted for low-temperature fermentations to preserve the most delicate expression of the fruit. A bold decision at the time, which has now become a hallmark.
Billecart Salmon Le Réserve blends 30% Pinot Noir from the Montagne de Reims and the Marne Valley, 30% Chardonnay from different crus of the Marne and 40% Meunier from the Marne Valley and the southern slopes of Épernay. The chalky soils, rich in chalk, impart tension and minerality, while the cool climate ensures vibrant acidity and slow ripening. Between 50 and 60% of reserve wines are incorporated into the blend, providing depth, complexity and stylistic continuity.
Winemaking
The grapes of Champagne Billecart-Salmon Le Réserve are carefully selected and gently pressed to extract only the purest musts. Vinification is carried out in stainless steel vats, preserving the aromatic clarity of each variety. Malolactic fermentation takes place, softening the acidity and providing a more enveloping texture. The wine matures for a minimum of 30 months on its lees in the cellar, developing complexity, aromatic finesse and an extremely delicate bubble. The moderate dosage of 8 g/l seeks balance and harmony, without hiding the freshness or mineral identity.
Taste
On the nose, Champagne Billecart-Salmon Le Réserve is precise and refined, never exuberant. Notes of fresh pear, crisp apple and white peach appear, accompanied by subtle brioche, toasted almond and a faint hint of light honey. Straight, clean and vibrant on the palate. The bubbles are very fine, almost creamy. The Chardonnay adds tension and citrus freshness; the Pinot Noir structure and depth; the Meunier rounds off with a gentle texture. Echoes of lemon confit, toasted bread and a marked chalky salinity emerge, prolonging the finish. Persistent, balanced and timeless, Billecart Salmon Le Réserve seduces with its precision, its classic elegance and its elegant, mineral Champagne profile.
