Description
Behind every great wine is a story, and that of Ballot Millot Meursault is that of a winery with centuries of tradition and an almost reverential respect for its vineyard. In the heart of Burgundy, Domaine Ballot-Millot has been perfecting the art of capturing the essence of Chardonnay in every bottle since the 17th century. Today, under the watchful eye of Charles Ballot, the winery combines traditional techniques with a more sustainable approach, prioritising the pure expression of the vineyard.
Ballot Millot Meursault is born from a selection of privileged plots: Les Pelles, Chaumes des Narvaux, Les Corbins and Les Peutes Vignes. Their location is key: a mosaic of calcareous and clay soils that give the wine a vibrant personality. Vines between 45 and 60 years old, rooted in this mineral-rich soil, give the wine depth and complexity. Each vintage is a reflection of the climate and the patience with which these vines have been worked.
Winemaking
The winemaking process is slow and meticulous. Manual harvesting ensures that only the best grapes reach the winery. Fermentation is carried out with indigenous yeasts, allowing the wine to develop its own character without unnecessary intervention. Ageing is a balancing act: 12 months in French oak barrels, with only 10-20% new wood so as not to overshadow the fruit, followed by 6 months in tank to refine its structure. There is no bâtonnage (lees stirring), which results in a more taut and fresh wine.
Taste
If you have ever tasted a great Meursault, you will know that it is a complete sensory experience. Ballot Millot Meursault opens with enveloping notes of toasted hazelnut, ripe pear and a touch of white flowers. On the palate, the key word is texture: a perfect combination of volume and minerality, with that vibrant acidity that keeps it alive with every sip. Towards the finish, it leaves a saline and fresh echo, as if a sea breeze had slipped into the glass.
