Winemaking
Free-run alcoholic fermentation with indigenous yeasts in open oak vats. Aged for 24 months in 3,000-litre vats. Subsequently, it remains in the bottle for 12 months before being released onto the market. Bottled unfined, unfiltered and without added sulphites.
Description
Werlitsch Ex Vero III is a balanced blend of Chardonnay and Sauvignon Blanc, each representing 50% of the composition. Its elaboration is a reflection of Brigitte and Ewald's dedication and artistry. Ex Vero III is grown in the steepest and most impoverished vineyard plots, located on the highest parts of the hill.
Winemaking
After a few days of contact between the must and the skins, the grapes are pressed and then fermented spontaneously in open oak vats of 3,000 litres. The wine then rests on its fine lees in the same oak vats for two years.
Taste
On the nose Werlitsch Ex Vero III expresses aromas of oxidative orange, followed by notes of sour apple, orange, pineapple and yeast. Hints of nuts and saline minerals can also be perceived and are revealed on the palate, culminating in a super acidic finish. In addition, it presents a complexity that oscillates between freshness, reductive strength and finely oxidative notes.
Werlitsch Ex Vero III is the result of the work of Ewald and Brigitte Tscheppe, who have transformed the Werlitsch farm into a synonym for some of the best white wines in the world.
