Description
Serragghia Fanino Catarratto e Pignatello is a red wine from the Pantelleria region of Sicily. This wine is the result of the combination of two native varieties of Pantelleria: Catarratto and Pignatello, both present in equal proportion, i.e. 50% of each. The volcanic and sandy soil of the region, together with an average age of the vines of 40 years, gives a unique character to this wine. In addition, it is important to note that the viticulture practiced is biodynamic, certified by Demeter.
Winemaking
After manual harvesting, the grapes are destemmed and gently pressed. Spontaneous fermentation takes place in terracotta amphorae, followed by maceration on skins in amphorae for three months. Ageing is carried out for 7 months in amphorae, without any clarification or filtration. Moreover, no sulphur is added, which makes it a natural and authentic wine.
Taste
Serragghia Fanino Catarratto e Pignatello has an unusual red to pink colour. On the nose, it is floral and fruity, with mineral hints completing the bouquet. On the palate, it is incisive, tannic and lively. It is a full-bodied, agile , tasty and precise wine.
It is ideal to accompany white meats, noble poultry and structured, flavoursome fish dishes. It is, without a doubt, an experience worth trying.
