Winemaking
Made exclusively from Palomino Fino grapes, Romate Manzanilla Viva La Pepa grows in the characteristic albariza soils, a white, porous soil that retains moisture and gives the vines just what they need to flourish. But this is not where the magic ends. Ageing under a veil of flor for around three years in the cellars of Sanlúcar creates a wine that is not only drinkable, but also palatable.
Taste
Imagine opening a window facing the sea and taking a deep breath. Such is the first sip of Romate Manzanilla Viva La Pepa. Its aroma takes us to a bakery at dawn: toasted almonds, freshly baked bread, a subtle touch of camomile.
