Biological ageing for 3 years under a film of yeasts (velo flor). Subsequently, oxidative ageing for 5 years.
Description
If you've ever wanted to taste a wine that speaks of history, character and craftsmanship, Amontillado Romate is one of those bottles that tells its own legend. It is not just a wine; it is a journey through the tradition of Jerez, through its warm winds and white albariza soils, where the Palomino Fino grape grows and transforms into something sublime.
The Sánchez Romate winery, with more than two centuries of history, has perfected the art of making wines that excite. Its Amontillado Romate begins its life as a fino, protected by the famous velo de flor, that layer of yeasts that gives it freshness and a saline touch. But then the magic happens: it is fortified and undergoes oxidative ageing in American oak casks. This is where the wine changes, becomes more complex, deeper, more evocative. A process that lasts for years, even decades, and that gives us a glass full of nuances.
Taste
From the first glance, Amontillado Romate wins you over. Its amber colour, with coppery glints, makes you imagine sunsets in the vineyard. You bring your nose closer and you get notes of hazelnut, a slight touch of wood and that unmistakable sharpness that only the great amontillados have. On the palate it is dry, but with an enveloping texture, as if each sip embraces you with its warmth and infinite persistence.
Amontillado Romate is a wine that asks for time, to be enjoyed without haste. A good plate of Iberian ham, a cured cheese, even some toasted almonds, and you have a pairing that will stay in your memory. For the more daring, a glass with a meat stew or garlic soup, and you will see how each mouthful is elevated.
It's not just a wine, it's an experience. And if you ever find yourself with a glass of Amontillado Romate in front of you, do your palate a favour: close your eyes and let it speak for itself.
