In the heart of the Penedès, an ancestral land of cavas, Rimarts Uvae Brut Nature was born, the most precise and complex expression of the Martínez family's know-how. It was Ricard Martínez de Simón who, with a courageous vision, opted for the production of artisanal sparkling wines without concessions, where time and the land set the pace. The result: a Cava that does not seek to please everyone, but to thrill those who understand the beauty of patience. From a careful selection of Xarel.lo and Chardonnay, grown in chalky soils and under the influence of a Mediterranean climate, Rimarts Uvae Brut Nature reflects the minerality, freshness and elegance of its origin. Each bottle bears witness to a philosophy of craftsmanship where each manual disgorgement -printed on the label- speaks of an unrepeatable moment.
Elaboration
Rimarts Uvae Brut Nature is made using the traditional method: the base wine is fermented before being transferred to the bottle for secondary fermentation. There, it rests for more than 80 months on its lees, developing an aromatic complexity that only time can provide. The manual disgorging, without the addition of liqueur d'expédition(Brut Nature), reinforces its dry, pure and direct character. Prolonged work on the lees produces a very fine, subtle bubble that embraces the palate without imposing itself.
Taste
Rimarts Uvae Brut Nature opens with an elegant and profound nose: notes of brioche, white fruit compote, dried fruits and a slight hint of yeast and white pepper. The palate is dry, ample and fresh, with a vibrant acidity that balances its creamy structure. Fine bubbles caress the palate and prolong a long, saline and persistent finish. The minerality of the terroir and the absence of added sugar make it an authentic and demanding Cava, ideal for those who value purity, tension and the honest expression of time in bottle.
