Description
Protos Verdejo is an exceptional white wine produced by Bodegas Protos, a historic winery in the Ribera del Duero region, founded in 1927. This vintage of Protos Verdejo is made from 100% Verdejo, a native grape of the Rueda Denomination of Origin, grown in unirrigated vineyards located around La Seca, Valladolid, at an altitude of between 750 and 900 metres above sea level. These vineyards, more than 15 years old, are located in soils poor in organic matter, with a sandy-loam and limestone texture, ideal for obtaining high quality wines.
Winemaking
Protos Verdejo is harvested mechanically and at night to ensure optimum freshness of the grapes. Its elaboration involves a pellicular maceration at low temperature and pressing in an inert atmosphere, with a controlled fermentation. This wine matures for three months on its fine lees, giving it greater roundness and structure.
Taste
Protos Verdejo has an attractive straw yellow colour with greenish reflections, denoting youth and freshness. On the nose, intense and complex aromas of white fruits such as apple and pear are perceived, together with tropical touches of pineapple and a herbaceous background characteristic of the Verdejo variety, such as boxwood and fennel. On the palate, it is dry and fresh, with moderate acidity and a well-structured body that provides balance. The ageing on lees gives it a smooth texture and roundness, while its bitter finish, typical of Verdejo, lingers, leaving a lingering sensation on the palate. This wine is ideal for pairing with white fish, sushi, seafood rice dishes and fresh or blue cheeses, enhancing each dish with its freshness and complexity.
