In the heart of the Miño Valley, where the granite slopes overlook the river and Albariño is almost a religion, Porta do Miño Licor de Café is born, a creation that brings together two worlds: the ancestral knowledge of Galician distillation and the enveloping character of the best Colombian coffee. Terras Gauda, deeply rooted in its environment, has been vinifying Albariño with care and precision for decades, and it was precisely from this intimacy with the bagasse -the solid soul of the wine- that the idea of transforming it into something more arose. A risky bet, yes, but true to his instinct: to create an artisanal Galician coffee liqueur that would not hide its vinous origin, but would pay homage to coffee with elegance and balance.
Elaboration
The key decision was to choose a delicate Albariño marc spirit that would not impose its strength, but would blend with the nuances of the coffee. To do this, they carefully selected the Albariño bagasse, seeking a clean and contained distillation. The variety chosen for the maceration, Colombia Excelso, stands out for its round aromatic profile and its roasted richness. In contact with the eau-de-vie, a slow and precise extraction takes place, respecting the balance between intensity and finesse. There is no rush in this process; just patience and listening.
Once the ideal point of maceration has been reached, just enough sugar is added to round off the whole and the alcoholic strength is adjusted until perfect harmony is achieved. After a rigorous analysis, Porta do Miño Licor de Café is bottled without excessive filtering, preserving all its natural texture and the aromatic fidelity of the artisanal process that defines it.
Taste
To the eye, Porta do Miño Licor de Café has a dark mahogany colour, clean and bright, which invites you to meditate. On the nose, it displays with precision the character of quality Colombian coffee: roasted notes, bitter cocoa, a distant echo of nutmeg. On the palate, it is dense but not heavy, velvety, with a clean and persistent aftertaste that faithfully brings back the essence of Colombian beans. There is no dissonance: each sip is a conversation between the Galician spirit of orujo and the warm soul of coffee.
