The single-vineyard Garnacha 2019 Peña Caballera has a more Châteauneuf-like profile, spicy, a little minty and with notes of aromatic herbs, red berries, some dusty and tight tannins. They did a shorter maceration, trying to control the tannin from the vintage. After aging in oak vats, they matured the wine in concrete for the last seven months of is élevage. This would welcome powerful food. They produced 1,782 bottles. It was bottled in July 2021.

Alcoholic fermentation with whole harvest and stems in wood tubs. Aged for 14 months in old French oak barrels of 500 liters. Bottled without filtering nor clarifying.
