Skin soaking for 2 days. Fermented with indigenous yeasts in stainless steel tanks with harvest without de-stemming. Malolactic fermentation and ageing for 12 months in stainless steel tanks.

Description

Peternell Grui wine is an intriguing and modern proposal that comes from Austria, specifically from the region of Niederösterreich. This wine is categorised as an orange wine, which means that it is made from white grapes that ferment with their skins, similar to how red wines are produced. This technique gives the wine unique characteristics and a distinctive personality.
Peternell Grui is produced by the Kollektiv Peternell winery. Although the winery has largely based its operations in Burgerland, they decided to venture to Carnuntum, near the Austro-Slovakian border. Although they have no vineyards of their own, they rely on biodynamic winegrowers in the area, buying grapes from old vines, more than 30 years old. The varieties used for this wine are 90% Grüner Veltliner and 10% Goldmuskateller.

Winemaking

The winemaking of this wine is a reflection of the winery's philosophy of minimal intervention. It is vinified with whole bunches of grapes that are transferred to tanks where the skins remain in contact with the juice for several days. Once this process is completed, the wine is returned to stainless steel tanks where it is aged for almost a year. Finally, it is bottled without the addition of sulphites.
