I also tasted two vintages from their flagship red that carries the name of their property and single-estate appellation, the oldest of which was the 2016 Finca Terrerazo, which I was able to compare with the 2017. 2016 was a cool vintage that delivered wines with great acidity, a low-yielding year with a dry and healthy harvest. The pure Bobal grapes, from vines at 800 meters in altitude on limestone-rich soils, were planted between 1945 and 1970. The grapes were fermented by plot in 3,500- and 5,000-liter oak vats with indigenous yeasts, and the wine matured in a combination of used 225- and 500-liter French oak barrels and those 3,500-liter oak vats. It has dark berry aromas, spices and a touch of smoke and ash, a little in the old style, something very evident when I tasted this next to the 2017, which felt a lot more elegant and precise. They started working the vineyards differently, but the change in the winery was in 2017. 23,700 bottles produced. It was bottled in May 2018.

Description
The wine Finca Terrerazo de Mustiguillo is a wine made 100% from the bobal grape, which denotes in every sip the quality of the fruit. It is defined by experts as an intense, warm and mature wine, but without leaving aside the freshness and finesse that characterises a good wine.
It is the first Vino de Pago certified in the Valencian Community, which conveys the essence of the vineyard and the culture of the locality where it is produced.
Winemaking
The vineyard where this wine is produced is located at an altitude of 800 metres, and is known as "El Terrerazo", hence the name of the wine. The wine is made using ecological techniques typical of traditional viticulture.
Then, in the harvesting phase, we try to maintain the philosophy of the winegrower, which focuses on harvesting the fruit in a traditional way. Vinification is carried out by batch, as is the selection of the clusters and berries.
The wine is then fermented in oak vats for 8 to 10 days and macerated for a further 12 days. The ageing of this wine is carried out over a period of 14 months, using the batonage technique to suspend the lees for at least 5 weeks.
Taste
The Finca Terrerazo wine has an aroma with lactic tones that offers the taster a creamy sensation, which combines perfectly with its balsamic touches. It is a complex but fresh wine, with a taste of ripe black fruit, minerals and smoky tones.
A rustic wine
The rustic characteristic of this wine is given by its creamy and velvety texture, which manifests itself on the palate in an elegant way. This wine goes perfectly with cured cheeses, meats with sauces, mushrooms and venison.
