Les Arrels del Cel, produced by Amós, stands out as an orange wine, a unique category that has gained popularity in recent years. Made from 100% Xarel-lo grapes from vineyards over 60 years old, Les Arrels del Cel is a testament to quality and history.
Elaboration
The Xarel-lo grapes, known for their robustness and versatility, are subjected to skin contact for ten days. This method contributes significantly to the complexity and texture of the wine. After this period, the wine is gently pressed and continues its fermentation for a further two months. Ageing takes place in 300-litre old French oak barrels, which adds an extra dimension of flavour and character to the wine.
Taste
Les Arrels del Cel displays a lovely bouquet of citrus, ripe pears and white flowers, an aromatic introduction that invites you to discover more. On the palate, it reveals itself as a slightly mineral wine, with medium-high acidity and a slight oxidation that gives it a fine structure and intriguing complexity.
The spicy notes and long aftertaste, enriched with hints of dried fruits, make Les Arrels del Cel a memorable taste experience. Its slightly oxidised character and well-defined structure make it an ideal accompaniment to a variety of dishes, enhancing the culinary experience.
