Description
From her winery in Arbois, in the heart of the Jura, Alice Bouvot makes wines that reveal the character of the terroir with radical honesty. Founder of L'Octavin, her project is based on biodynamically farmed vineyards and a philosophy that completely renounces additives, including sulphites. "Pur jus in its purest form. L'Octavin Hip Hip Hip Jura Chardonnay comes from a friendly vineyard in Arbois, with its chalky soils and continental climate, where the Chardonnay of the Jura expresses a rare tension.
Winemaking
L'Octavin Hip Hip Hip Jura Chardonnay is made from 100% Chardonnay, spontaneously fermented withindigenous yeasts. The grapes are directly pressed and the must is transferred to tank where it ferments without temperature control. There is no filtration or clarification, no SO₂ or sugars are added. Ageing is brief and bottled in the spring, seeking to capture the wine's primary energy before it loses its vitality. Alice intervenes minimally, but observes each stage with surgical attention.
Taste
Far from the cliché of round or sweet-toothed Chardonnay, L'Octavin Hip Hip Jura Chardonnay displays electric acidity and vibrant nerve. The nose is immediate and slightly wild: notes of green apple, natural cider, a trace of candied lemon and a background of raw yeast.
On the palate, L'Octavin Hip Hip Jura Chardonnay is dry, taut and mineral, with an agile texture evoking wet stone, citrus zest and a finish reminiscent of rock salt and fresh herbs. The fruit is secondary; what dominates is the energy of the soil and the purity of the juice. The aftertaste leaves a juicy sensation, like biting into an apple still dewy.
