The white 2022 Testoiro was produced with grapes from the lieu-dit, or paraje, Quinta de Soutipedre in Manzaneda in the Bibei Valley, approximately 50% Godello and 50% Dona Branca from old vines on slate soils. The full clusters were pressed and the juice fermented with indigenous yeasts in 500-liter barrels, where it matured with lees without bâtonnage for eight months. Tasted next to the Conasbrancas, the other white from this same vintage, they are as different as night and day, Jekyll and Hyde. This is more mainstream, pale and bright with a balsamic nose, serious and harmonious, keeping the poise and balance, with moderate alcohol and the tasty minerality and saltiness. Serious and different but similar in quality. In 2022, they harvested a little earlier (same in 2023), and the wines feel fresh and vibrant. 1,200 bottles were filled in May 2023.

Description

Fedellos Do Couto Testoiro is a white wine that combines the characteristic freshness of the native white grapes with its particular method of elaboration.
It is a wine made from a blend of Doña Blanca, Godello and other native white grape varieties, which provide not only the perfect balanced acidity for this wine, but also the subtlety derived from the artisanal techniques used in its production.
The fruit comes from vineyards between 60 and 80 years old, located at an altitude of 450 metres above sea level. The soils where the grapes are grown are slate soils, organically treated to ensure that no chemicals or processes are used that could alter the flavour of the grapes.

Winemaking

The Testoiro wine follows the philosophy of the winery that gave birth to it, where every stage of the winemaking process respects the natural expression of the fruit, without adding elements that accelerate the ripening or fermentation processes.
The vinification process begins after harvesting the fruit, incubating 80% of the grapes without destemming and subjecting the rest of the fruit to a gentle pressing.
Then, they are fermented in barrels with indigenous yeasts at a temperature of 18°C, followed by maceration for 30 days.
Finally, the resulting liquid is transferred to French oak barrels to undergo an ageing process of 8 months.

Fedellos Do Couto's Testoiro wine is a white wine with a balanced acidity that defines it very well, as it brings freshness to the palate while remaining vibrant. It also has a long and persistent finish, leaving hints of salty and citrus notes on the palate.
