Description

Jean Marc Dreyer does not make wines, he lets them grow. In his vineyards in Alsace - on clay and limestone soils, with gravel and scattered stone - he practices a lively viticulture, without superfluous interventions. The idea for Dreyer Pink Pong Macération came almost by chance: an unexpected maceration of Pinot Gris revealed a vibrant character that inspired him to go further. Thus was born this unique cuvée, composed of equal parts Pinot Noir, Pinot Gris and Auxerrois, a blend that defies labels and styles. Each variety is vinified separately, with absolute respect for its identity and origin.

Winemaking

The grapes for Dreyer Pink Pong Macération are harvested by hand and undergo a 7-day maceration with their skins, extracting texture, colour and aromatic expression. Fermentation is carried out with indigenous yeasts, without additives, in neutral tanks. Subsequently, each batch rests for 9 months in foudres, where the wine breathes and is slowly refined. It is neither filtered nor clarified, and hardly any sulphur dioxide is added at bottling. The final blend is decided at the end of the process, like a conversation between varieties finding their balance.

Taste

Dreyer Pink Pong Macération shows a deep salmon pink, almost amber hue. On the nose, notes of fresh red fruits (wild strawberry, cherry) burst forth, with hints of orange peel, pink pepper and a dry floral background. The palate is light in texture but rich in expression: vibrant acidity drives it with energy, soft tannins support it with elegance, and the fruit remains restrained, never exuberant. A faint saline and herbaceous memory appears on the finish, adding tension and persistence.

Dreyer Pink Pong Macération is not a light wine, far from trivial: it has layers, structure and personality. A maceration rosé that plays on the margins and shines just there: where the expected ends and the surprising begins.
