Description
Dominio do Bibei Refugallo Tinto is a wine that encapsulates the essence of the D.O. Ribeira Sacra, a region known for its ancestral winemaking tradition. This wine is a tribute to the land and the indigenous varieties of the region, made with a coupage where Mencía predominates (90%), complemented with Garnacha Tinta ( 10%), and in some vintages, Brancellao and Mouratón are also included, bringing a unique complexity to the blend.
Winemaking
The production of Dominio do Bibei Refugallo Tinto follows a process that respects the environment, using traditional cultivation methods that highlight the unique character of the terroir. The grapes, from granitic soils at altitudes of 200-700 metres above sea level, are fermented at a controlled temperature. The wine is then aged on the lees for 20 months in used French oak barrels, and remains in the bottle for a minimum of 18 months before release. This careful vinification and ageing process reflects the winery's commitment to quality and the expression of the terroir.
Taste
Dominio do Bibei Refugallo Tinto is a fruity and spicy wine, with a notable presence of ripe red and black fruit on the nose, complemented by subtle notes of cocoa and toast. On the palate, it is fresh and easy to drink, with a flavour dominated by ripe fruit. The structure of the wine is balanced, with a lively acidity and marked but soft tannins, which contribute to a long and satisfying finish. This organoleptic profile makes it an ideal accompaniment to cured meats, red meats, stews and traditional casseroles, and it is recommended to be served at a temperature of 16-18°C.
