Description
At Domaine de l'Ecu, consistency has always been more important than comfort. Pioneers in organic farming since 1975 and certified Demeter biodynamic since 1998, their philosophy does not respond to trends, but to deep convictions. Virtus was born precisely from this attitude: to demonstrate that in the gneiss and orthogneiss soils of the Loire, facing Southwest and bathed by a cool Atlantic climate, Cabernet Sauvignon can express itself with its own identity, far from the opulence of the Southwest.
Winemaking
The plot, just 1.5 hectares, is worked with ploughing and simple Guyot pruning, limiting yields to around 30 hl/ha. The grapes are harvested by hand and the grapes are brought in by gravity, without pumps. Fermented with indigenous yeasts after destemming and macerated for 10 days for precision rather than extraction. The wine then rests for 24 months in concrete tanks, without filtering or fining. The concrete refines the texture without adding external aromas, allowing the terroir to speak clearly.
Taste
In Domaine de l'Ecu Virtus the nose is frank and expressive, dominated by cassis and cherry, accompanied by a marked spicy character of white pepper. The fruit is ripe but restrained, always crossed by a mineral and slightly earthy sensation.
On the palate the entry is smooth, almost silky, but tension quickly appears. The centre is firm, with tannins that are still tight, structuring a very precise whole. The Atlantic acidity brings verticality and freshness, stretching the wine towards a long finish, marked by small red fruits and a noble bitterness that invites the next sip. Domaine de l'Ecu Virtus is a Cabernet with a mineral character, straight and elegant, more depth than volume, more nerve than exuberance.
