The NV Extra-Brut Dans un Premier Temps (2020) is the last vintage that Dhondt will produce of this 'entry' cuvée, as he is going to isolate his vines from the Sézannais for a standalone bottling that's more coherent with his approach in the Côte de Blancs. The swan song rendition is very attractive, however, delivering notes of pear, white flowers and hazelnuts, followed by a medium to full-bodied, charming and vinous palate that's animated by a pillowy mousse.

Dhondt Grellet Dans Un Premier Temps Extra Brut is a champagne that represents the essence of French viticulture with a unique blend of grapes. This champagne is an assembly of Chardonnay (50%), Pinot Noir (30%) and Meunier (20%). These grapes come from old vineyards, with an average age of 40 years, which contributes to the complexity and depth of flavour of the wine. The majority of the blend, 70%, comes from the vintage, while the remaining 30% is a perpetual reserve wine dating back to 1986.

Winemaking

The making of this champagne is a testament to the dedication and art of winemaking. The wine is fermented in oak barrels between one and five years old, which gives it a unique texture and character. Bottle ageing follows the traditional method, with a resting time of approximately two years on the lees. This process gives the champagne a complexity and structure that distinguish it. The sugar content is minimal, only 2 grams per litre, and it is classified as Extra Brut.
