Description
Derain Allez Goûtons Blanc is a single varietal white wine made from Burgundy Aligoté, produced by Dominique Derain in young vineyards with clay-limestone soils planted in 1989. The name of the wine is a play on words meaning something like "Let's enjoy!" in reference to the fact that it is a wine with many aromas and flavours.
Dominique Derain is a wine producer in the Burgundy region of France, who has pioneered biodynamic farming in the area. He makes wines in a way that respects nature, without intervening too much in the process, with the aim of allowing each grape variety to express itself naturally.
Winemaking
Primeur" wine is made by direct pressing and spontaneous fermentation in fibreglass tanks. It is left to age for two months to allow impurities to settle in the cold of winter. It is bottled early, without filtering or fining, and without the addition of any additives.
