Description
Dinavolo wine is composed of a balanced blend of varieties: 25% Malvasia di Candia Aromatica, 25% Marsanne, 25% Ortugo and 25% of a forgotten variety. This blend comes from 28 year old vines, located in the highest part of Giulio's sloping limestone vineyards.
Winemaking
Once the grapes have been crushed and destemmed, they are put into a stainless steel tank where they are macerated for 10 months. During this time, it ferments for one to three weeks in contact with the skins. To ensure uniform fermentation, the wine is pumped over seven to eight times a day. It is important to note that only indigenous yeasts are used in this process. After a month of maceration, 60% of the volume is racked into 500-litre old acacia oak barrels, where it is aged for three months. The remaining 40% continues with the maceration of the skins until it is 10 months old. At the time of bottling, minimal amounts of sulphur are added to preserve its qualities.
Taste
Dinavolo is a wine with an intense orange hue. It has a deep amber colour and it is possible to find sediment in the bottle. On the nose, intense notes of pu-erh tea, dried apricot, peach, Williams pear, pink grapefruit confit, umeboshi and nutmeg, complemented by hints of sweet dried mushrooms. On the palate, it is extremely dry, with medium acidity and powerful tannins that can still be perceived as somewhat rough. It is a wine that requires a long decanting to show its full splendour.
