Description

There are some champagnes that surprise you and others that envelop you in their history. Delalot Pléiades is one of those that do both at the same time. Created by Jérôme Lefevre, an art lover turned winegrower, this extra brut contains in each bubble the essence of his small vineyard in Charly-sur-Marne.
This Blanc de Noirs is made from 75% Pinot Noir and 25% Meunier. Two varieties that provide structure and freshness, respectively, and which find their purest expression in this terroir. The sandy soils and organic farming allow the grapes to grow without interference, absorbing every nuance of the environment.

Winemaking

Delalot Pléiades is made meticulously, without haste or artifice. Spontaneous fermentation in wooden barrels, followed by 16 months of ageing in the same barrels. The wine then rests for 18 months on its lees, refining its texture and depth. Just 2.5 g/l of dosage is added, letting the wine's authenticity speak for itself.

Taste

The first sip of Delalot Pléiades is like opening a window into a spring garden. Green apple, juicy pear and a hint of lime awaken the palate with vibrant freshness. Then comes the mineral, that subtle, saline sensation reminiscent of a sea breeze. And, in the background, an echo of brioche and toasted almonds, the fruit of its time in contact with the lees.
The bubbles are fine and elegant, the kind that caress rather than overwhelm. Delalot Pléiades requires time, pauses and, above all, good company. Try pairing it with fresh seafood, smoked salmon or a good creamy cheese. I promise it will not leave you indifferent.
