This 2009 Cuvée Umami Grand Cru Extra Brut was disgorged in March 2013. It offers a very clear, pure and complex aroma with a lovely chalkiness and iodine flavor on the nose that leads to rich, full-flavored and highly complex taste on the palate. The wine is very fresh and mineral, and shows much more purity and vibrancy than half a year ago when I rated it for the first time. This is an excellent champagne (70% Chardonnay, 30% Pinot Noir) that has quite a lot of finesse and shall develop over the next ten years, if not more.

De Sousa Cuvée Umami Grand Cru Extra Brut is a sublime expression of viticulture and oenology, encapsulating the essence of two exceptional grape varieties. This champagne is composed of 60% Chardonnay and 40% Pinot Noir, a combination that reflects the mastery of blending and terroir. Sourced from the Côte des Blancs and the Montagne de Reims, the 2009 Umami benefits from 100% chalk soils, which contributes to its unique profile. The vines, with an average age of over 60 years, are a testament to the heritage and quality of the vineyard.

Winemaking

Harvesting is carried out by hand, ensuring that only the best grapes are selected. Ageing is carried out entirely in oak barrels, adding complexity and depth to the wine. This vinification method, together with a dosage of 3 gr/L, allows the champagne to fully express its character. The absence of filtration and fining preserves the authenticity and integrity of the wine. With an ageing potential of 10 to 20 years, this champagne reveals its best expression when served at a temperature of 8-10°C.

De Sousa Cuvée Umami Grand Cru Extra Brut is a feast for the senses. Its flavour profile is an amalgam of evolved aromas including tilleul, honey, gingerbread, raspberry and cherry.
