Description
Cos Zibibbo In Pithos is a dry, natural and biodynamic orange wine produced by Azienda Agricola COS in the region of Vittoria, Sicily. This winery, founded in 1980 by Giusto Occhipinti, Titta Cilia and Cirino Strano, has pioneered amphora vinification in Sicily, recovering ancestral techniques to offer unique wines of great territorial expression. COS is characterised by its focus on biodynamic agriculture, working with the minimum interventionism both in the vineyard and in the winery, allowing the terroir to express itself authentically.
Winemaking
Zibibbo, also known as Moscato of Alexandria, is the only variety that makes up this wine, which gives it its distinctive character. The grapes come from vineyards grown on red and chalky soils, rich in minerals. The grapes are harvested by hand, carefully selecting the grapes to guarantee the best quality. After the harvest, the grapes ferment spontaneously using indigenous yeasts, and a prolonged maceration is carried out for 6 to 7 months in 400-litre terracotta amphorae. This long period of contact with the skins adds structure and complexity to the wine. It is then transferred to cement tanks, where it remains for at least 3 months to complete its ageing, adding freshness and a silky texture on the palate.
Taste
Cos Zibibbo In Pithos is a wine that stands out for its aromatic complexity and freshness on the palate. On the nose, floral notes of jasmine combine with aromas of exotic fruits such as apricot, melon and mango. Light herbal and mineral hints are also perceived, adding depth to the aromatic bouquet.
On the palate, the wine is dry and shows a balanced acidity that gives it a feeling of freshness and dynamism. Notes of tropical and citrus fruits, such as orange, mingle with a mineral and saline character that makes it vibrant and persistent. Its enveloping texture and long finish, with a slightly bitter aftertaste, make it an extremely interesting and versatile wine. It is ideal with seafood, grilled fish, vegetables and more complex dishes such as pistachio pesto.
This wine is a clear demonstration of COS's artisanal and environmentally friendly approach, allowing Zibibbo to express itself to its full potential through traditional and natural winemaking methods.
