Description
Constantina Sotelo Octopus Tinto, produced by Constantina Sotelo, is a true representation of the natural wines of the Rías Baixas. Constantina Sotelo, a winemaker who has worked in an artisanal and environmentally friendly manner, uses indigenous varieties such as Caíño tinto and Espadeiro to create this unique wine. Her vineyards are located in the Salnés Valley, very close to the Ría de Arousa, and cover just 2.5 hectares of micro-plots, where the vines are cultivated without the use of chemical products. These vineyards, planted on granitic decomposed soils, are worked manually and under traditional techniques inherited from previous generations.
Winemaking
The winemaking process begins with a manual harvest and manual destemming. Fermentation is carried out with indigenous yeasts in earthenware amphorae, a method that respects the expression of the terroir to the maximum. In addition, the wine undergoes spontaneous malolactic fermentation and spends 10 months with its skins in amphorae, which gives it a particular complexity and great freshness.
