I think the 2013 Assemblage is the pinkest of all vintages I've drunk from this blend of Pinot Noir and Chardonnay, so I'd say this is a Rosé rather than the blanc de noirs it used to be. The nose combines some red fruit, grilled nuts and yeast aromas, combined in quite a subtle way. The palate is powerful and compact, with great balance and integration of all its component. I often have this wine with rice dishes and it's a combination made in heaven! 7,500 bottles produced.

Description
The story of Colet Assemblage Brut Nature was born in the heart of the Penedès region, where the Colet family has been cultivating vineyards for generations with a vision beyond conventional cava. They decided to create a sparkling wine with a mature expression, able to dialogue with gastronomy without losing freshness or tension. The inspiration: a blend of 55% Pinot Noir and 45% Chardonnay, which would capture the complexity of its chalky soils and the thermal contrast of this Mediterranean region. It was a risky bet: more body, more time on the lees, less sugar, but with a clear intention - varietal honesty and precision.
Winemaking
The production of Colet Assemblage Brut Nature begins with the manual harvesting of the grapes, which are gently pressed to preserve their varietal purity. After an initial separate fermentation, the wine is blended and bottled to start the second fermentation in the bottle, following the traditional method. What defines Colet Assemblage Brut Nature is its exceptional ageing on lees for 61 months, providing aromatic complexity and very fine bubbles.
Taste
Colet Assemblage Brut Nature presents itself in the glass with a pale coppery hue and an abundant crown of bubbles. On the nose, it displays a precise palette of red apple, candied citrus, brioche, dried leaves and ripe strawberry. On the palate, it is dry, clean, with a lively acidity that structures the palate. Layers of white fruit, hints of toast and a subtle minerality reminiscent of the limestone soil of the Penedès. The finish is long and persistent, with notes of raw almonds and citrus peel. This sparkling wine is ideal to accompany rice dishes, seafood or oily fish, and represents a refined and gastronomic expression where terroir and time in bottle become the silent protagonists.
